Beautiful and considerate design. The rooms are small but feel luxurious. You couldn’t be in a better location and the staff couldn’t have been more hospitable. We wish we had known about the different pillow options ahead of time and the bed was quite stiff. The robe in our bathroom still said Nobu, which was a bit odd. One of the faucets did not work, no cold water, but it didn’t impact our stay.

Disappointing. You're paying for the name.
TL;DR - The staff here was excellent. Room smelled like sewage. Restaurant just okay. Fairly disappointed by the hotel. The staff was fantastic and the room was neat and comfortable but there was a smell of sewage after our noses were acclimated to the cologne permeating the property. Also disappointed in the food. The service was fantastic with the staff taking the time to explain each course of omakase, however the food was whatever. I'm not familiar with the sushi scene in southern Spain but this was above average at best compared to restaurants in Atlanta. The ambiance of the restaurant is also a bit lost. We were seated in the back in what resembled a breakfast area at a Marriott. I would typically chalk it up to travelling with a baby, but there were a tables in the front with small children. Finally, the upstairs patio, while perfectly maintained, was unstaffed. We ended up just grabbing drinks from El Corte Ingles.

Disappointing
There are lots of beautiful 5 star hotels in Seville, and when you chose Nobu (which is more expensive than the others in the same category) you´re expecting impeccable service and great experience. Even though the hotel was beautiful - both common areas and rooms - and in a great location, the service was disappointing. Staff was very kind and helpful, but overall clearly inexperienced (with some exceptions o course). You could tell the hotel has opened recently and they were struggling to figure things out. Little things like no vegetal milk other than soy or lack of service in the pool area didn´t match expectations. Sure these are small details and in the end we were just laughing about the incidents, but those shouldn´t happen in a hotel in that category.
